I’m so excited to announce that cooking classes are back!

After taking a several-years-long break, I am finally able to focus on them again. And, I think I’ve finally figured out how to make them sustainable (yay!).

I first launched online classes in 2020 as a way to transition from the in-person classes I was offering before the pandemic. Back then, I definitely bit off more than I could chew by hosting them every. single. week. Sometimes three in one weekend. This time around, I’m doing things differently. The goal is to offer one Masterclass a month, along with the writing workshops I’ll be posting about soon. And there will be limited seats available as well.

On Saturday, May 30th, I want to spend some quality time with you for a Salvi Merienda Masterclass. I’ll be showcasing the beloved Quesadilla paired with coffee—but we’re mixing it up by making a Café con Leche Ice Cream. Think of it like a Quesadilla a la mode. While I was taste testing the concept, I had my neighbors over and they loved it. A perfect merienda.

Lately, I’ve been going back through my research notes from the cookbook and found stories and technical nuances about the Salvadoran Quesadilla that I didn’t have space for in the final edit of the book. I’ve been itching to share these interesting bits of history with you so this is the perfect opportunity.

We won’t just be baking; I’ll be sharing this exclusive research and cultural history while we prepare our merienda.

What we’re making:

  • The Salvi Quesadilla: We’ll discuss specific cheese ratios and the history of this “cake” and why I don’t like it when folks compare it to a cheesecake.

  • No-Churn Café con Leche Ice Cream: I’ve perfected a version that requires no machine—just a few simple ingredients and you’re set. It is the ultimate pairing for a warm slice of Quesadilla.

The Details:

  • When: Saturday, May 30th | 11:00 am - 1:00 pm (PST)

  • Where: Live via Zoom (The session will be recorded if you can’t make it live!)

  • Investment: $65 per household (Includes the 2-hour class + a digital Prep Packet with my research notes).
